Chef, hooligan, provocateur. His way to the kitchen was not planned - a mathematics teacher, he got a temporary job in the restaurant. And stayed there. A couple of years later he left for London in the two-star Michelin restaurant The Square, to Chef Phil Howard. Here the main rules of his cuisine were formed - to search for the best quality, appreciate the natural taste and take good care of the products. And here he became a fan of vegetables forever. So much so that in one of his next projects - the St. Petersburg restaurant "Our Dacha" - even planted his own garden. In 2016, as a part of the team White Rabbit Family, Vitaliy opened the gastro bistro "Technicum", which picked up the European trend for a creative, not boring and at the same time democratic cuisine. And still 30% of the dishes in his menu are made exclusively from vegetables, the chef consider it is not necessary to "spoil them with protein."
